Lagana i osvježavajuća salata sa komoračem i par riječi o ovoj sjajnoj porvrćki!
Komorač, narandže, masline, maslinovo ulje i suvi origano - nemojte mi reći da ne zvuči mediteranski, zdravo i privlačno! :)
Morač ili komorač (eng. fennel) je biljka osvježavajućeg ukusa veoma pogodna za jelo u sirovom stanju. Možete je grilovati, peći ili kuvati, a izbor namirnica sa kojima se odlično uklapa je neograničen.
Osim korijena, veoma je rasprostranjena i upotreba sjemenki komorača. Možete ga grickati (za osvježavanje daha) i koristiti u pripremi peciva ili slanih krekera, kao i za začinjavanje raznih slatkih i slanih jela. Ja sam radila upravo to kad sam otkrila ovaj začin - koristila ga u svemu tome svakodnevno. Stvarno sam uživala u eksperimentisanju, a u našoj kući se često moglo čuti:
– Hm... dobro je, ali ima nešto neobično...
– Ja već počinjem da se smješkam i prosto ne vjerujem da nije odmah shvatio
– Pa zar opet sjeme komorača?!
No, do sad je sjeme komorača dobilo zasluženo mjesto u fioci sa začinima, pa je i njegovo korišćenje svedeno na normalu. :)
Nažalost, komorač nije mnogo popularna biljka kod nas, ili to makar nije bila do prije par godina. Ja sam je otkrila u Italiji, prvi put isprobala u svježem obliku i to baš u ovoj tradicionalno sicilijanskoj salati.
S obzirom na to da na Siciliji mnogi posjeduju plantaže pomorandži i maslina (ili makar po neko drvo u dvorištu), sasvim je logično da se ovakva jela svakodnevno nađu na njihovom stolu. Dakle, moj prvi susret sa njom je bio baš na Siciliji, od domaćih pomorandži i sa domaćim maslinama!
Osim već pomenute salate, željela bih vam predložiti još jednu sličnu i istog porijekla: pomorandže (po mogućnosti one crvene), ljubičasti luk i masline. Odlična je, ali pošto osim mene, kod nas nema mnogo ljubitelja luka, ona je prava rijetkost.
Da bih vas malo zaintrigirala, pokušaću da vam dočaram eksploziju i preplitanje ukusa dok jedete ovu salatu. Dakle: statkoća i kiselkast ukus pomorandže - odmah zatim vas obuzima izuzetno osvježavajući i specifičan osjećaj kao da ste skoro progutali anis - a na kraju dolazi slanoća koja potiče od maslina. I na momente predivna aroma origana. Ja bih to sve opisala kao fantastično preplitanje slatkog, slanog, svježeg i mirisnog, ali ništa od toga nije toliko izraženo i dominantno u odnosu na ostale ukuse i samim tim je u savršenom balansu!

Recept
Sicilijanska salata sa komoračem i pomorandžama
Osvježavajuća i mirisna salata sa svježim komoračem i pomorandžama. Veoma tipičan prilog na stolu u sicilijanskim domovima. |
- vrijeme pripreme: 15'
- ukupno vrijeme: 15'
- količina za 3 osobe
Sastojci
- 2 veća komorača*
- 2 pomorandže
- oko 100g sitnijih crnih maslina*
- 3-4 kašike maslinovog ulja
- so, crni biber
- sušeni origano za posipanje (po želji)
Postupak
- Očistite komorač tako što ćete prvo odstraniti vrhove. Zatim sklonite donji dio i spoljašnje najčvršće "listove" (u slučaju da je biljka mlada i jedra, onda samo nožem sklonite tanki spoljašnji dio). Prerežite komorač na pola i odstranite korjen. On je previše vlaknast i treba ga izbjeći. Položite zatim biljku presječenom stranom na dolje i nasjeckajte je na tanke režnjeve ili na kockice.*
- Oljuštite pomorandžu i narežite na kocke.
- U činiji za salatu izmiješajte komorač, pomorandže i masline. Posolite, malo pobiberite i prelijte maslinovim uljem. Izmiješajte i ovlaš pospite suvim origanom.
- Salata je veoma osvježavajuća i odličan je dodatak grilovanoj ili pečenoj ribi.
Napomene
- Ovu salatu je najbolje napraviti direktno prije služenja. Komorač ima tendenciju da potamni ukoliko ga nasjeckate i ostavite da čeka. Ipak, ako baš želite da sve bude unaprijed spremno, nakon čišćenja i sječenja, kriške stavite u hladnu vodu. Procijedite i začinite salatu.
- Ukoliko niste sigurni kako da pripremite komorač, predlažem vam da pogledate članak na sajtu Coolinarika.
- Za pripremu ove salate obično se koriste sitnije crne masline. Praktičnije je da budu očišćene, ali ja ih rijetko kupujem (budu previše mekane) i koristim neočišćene.
Ako ste uopšte stigli do kraja... Molim vas, nemojte da odustajete od ovog jela ni zbog toga što je zvijezda komorač (koji, možda, do sad niste probali i ne želite da rizikujete), a ni zbog toga što se radi o "čudnoj" kombinaciji povrća, voća i (još!) maslina. Probajte i dajte šansu novim ukusima, možda se navučete kao ja! :)
Mnogo ti je lepa ova salata i verujem da je zaista eksplozija ukusa. Prvi put sam ga probala pre nekih mesec dana (iako ga godinama njušim po supermarketima, uzmem i ostavim) u istraživanju Ivaninog bloga, zapečenog. ovo mi je na to do listi, samo što kod nas ove crne masline nekada znaju baš da budu blage, skoro neslane.

IzbrišiKad sam je prvih puta jela - kad je nisam sama spremala, uvijek je bila prilog pohovanoj ili punjenoj sitnoj ribi. Ja sama je najčešće kombinujem sa pečenim lososom ili nekom drugom ribom, mada mislim da bi savršeno išla uz neki fin komad pečenog ili grilovanog mesa...
